Stuffed Poblano Peppers

So...the past couple of days have been pretty busy. We had family in town yesterday and more family coming tomorrow, so I haven't had much time to get on here. I know you are all very disappointed.

Since I'm short on time, I thought I would share a quick recipe and wish everyone a happy Friday!

Stuffed Poblano Peppers

For the Peppers:

2 Poblano Peppers

Cut the peppers in half lengthwise. Scrape out the seeds and the insides of each pepper. Place them skin side up on a baking sheet. Put them under the broiler for 5-7 minutes. Then flip them over and put them back under the broiler for another 5-7 minutes.

For the Filling:

1/2 pound ground beef
1/2 onion, chopped
1/2 packet taco seasoning
1/4 - 1/2 cup salsa

Cook ground beef and onion in a skillet until beef is cooked through and onions are translucent. Add taco seasoning to beef mixture. Stir in salsa.

Once you have cooked the peppers, stuff each half with the filling mixture. Top with cheese and put back under the broiler until cheese is melted.

These are really fast and easy to make, but they are SO good. Just in case you are wondering, these are not too spicy at all. Just the right amount of heat in my opinion.
